Looking to kick-start your Summer health kick? Our nutritious and zesty Prawn and Avocado Salad is guaranteed to make you feel good every time!
Ingredients:
- 12 medium Pre-cooked Prawns
- 1 large Avocado
- Salt and Pepper seasoning, to taste
- ½ Lemon
- 12 Cherry Tomatoes, halved
- 1 tsp Olive Oil
- Mixed Salad, of your choice
Method:
- In a large bowl toss the mixed Salad with the Olive Oil.
- Cut the Avocado in half, and remove the stone.
- Peel off the skin and slice the avocado into strips.
- Chop the Cherry Tomatoes into halves.
- Squeeze the Lemon juice onto the pre-cooked Prawns and season to taste.
- Add the pre-cooked prawns and sliced avocado and cherry tomatoes to the Salad and toss together.
- Serve with any dressing you like.
