Jerk Chicken

Serves 4, 15 minutes Preparation, 40 minutes Cooking

Put some music in your food with our zingy Jerk Chicken recipe. It’s sure to get your taste buds dancing!


For the Chicken:

  • ½ Lime
  • 4 large Chicken Breasts
  • Salt and Pepper seasoning, to taste

For the Jerk seasoning:

  • 4 tbsp ground All Spice
  • ½ tsp Chilli Powder

For the Jerk sauce:

  • 2 tbsp Honey
  • 1 tbsp of the pre-made Jerk seasoning
  • 1 tbsp Tomato Ketchup
  • ½ tsp Chilli Powder
  • 1 tbsp Brown Sugar
  • 1 tbsp Vinegar

For the Mango salad:

  • 1 fresh Mango
  • ½ fresh Red and Green Chilli
  • Sweet Chilli sauce


  1. Preheat the oven to 180oC/200oF/Gas Mark 4.
  2. Place the Chicken Breasts in a glass oven-proof dish.
  3. Squeeze the juice of half a Lime over the Chicken Breasts and season with Salt and Pepper.
  4. Sprinkle the Jerk Seasoning over the chicken, leaving 1 tbsp for the Jerk Sauce, and place the chicken into the oven to cook for 25 minutes.
  5. Mix the Jerk Sauce ingredients altogether in a bowl, then spread on top of the chicken 
  6. Return the Jerk Chicken to the oven and allow to cook for another 15 minutes.
  7. To make the Mango Salad, peel and dice the Mango and chop the Red and Green Chillies.
  8. Drizzle the Mango Salad with the Sweet Chilli sauce.
  9. Once cooked, remove the Jerk Chicken from the oven.
  10. Serve with a side of rice, fresh tomatoes and the Mango Salad.
