Beef in Black Bean Sauce

Serves 4, 15 minutes Preparation, 30 minutes Cooking

For a simple but tasty dish, rustle up a Chinese Beef in Black Bean sauce. Served with Egg Fried Rice, nothing beats tasty home cooking, so put down the Takeaway menu!

Ingredients:

For the Beef in Black Bean Sauce:

  • 1 Red Pepper
  • 1 large Onion
  • Drizzle of Oil
  • ½ Red Chilli
  • 100g Baby Corn
  • 100g Mangetout
  • Salt and Pepper seasoning, to taste
  • 200g Beef, of your choice
  • 1 jar Black Bean sauce 
  • Sprinkle of Sesame Seeds

For the Egg Fried Rice:
  • 2 Eggs
  • 200g Rice
  • Drizzle of Oil

Method:

  1. In a large saucepan boil the rice in hot water.
  2. Cut the beef into chunks and place into a bowl.
  3. Pour half of the Black Bean sauce onto the beef and coat thoroughly using your hands. Season with Salt and Pepper and leave to marinade whilst you prepare the vegetables.
  4. Peel and chop the Onion, Pepper, Baby Corn and Red Chilli.
  5. In a large frying pan or wok fry the Black Bean Beef in a drizzle of Oil for 5 minutes, then add the chopped vegetables and Mangetout until softened.
  6. Add the remaining black bean sauce and simmer gently.
  7. To make the Egg Fried Rice, in a separate frying pan scramble the Eggs in a drizzle of oil.
  8. Drain the rice and add to the scrambled egg mixture and stir through.
  9. Serve the Beef Black Bean on top of the Egg Fried Rice, and sprinkle with Sesame Seeds for an authentic taste.
